Fermentation is a preparation technique by which enzymes and micro flora breakdown glucose molecules within food. In the case of fermented soy beans, enzymes leave the beta-glycosal bonds from naturally occurring Genistitin and Daidzin to form more biologically active isoflavones: Genistein and Daidzein.
